Meat Loaf

Applesauce Meatloaf

  • 1 lb. lean ground beef
  • ¾ lb. pork sausages (without casings)
  • 1½ cups very dry bread crumbs
  • 2 cups apple sauce
  • 1 tbsp. Worcestershire sauce
  • ½ tsp. sage
  • ½ tsp. salt
  • 4 twists of pepper mill

Mix all of the ingredients together. Butter a loaf pan, and pack the ingredients into it. Bake in a 350 F oven for 45 minutes.

Beef Loaf

  • 1 lb. ground beef
  • 1 tsp. onions, chopped
  • ½ cup bread crumbs
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 tbsp. butter

Mix all of the ingredients together, except for the butter. Form the meat mixture into a loaf, and place the loaf in a baking pan after melting the butter in it. Place in a 400 F oven for about a half hour, basting every 5 minutes or so with drippings from the bottom of the pan. Use additional butter, if drippings are scarce. As an alternative to basting, you might try laying strips of bacon across the top of the loaf.

Cheese Meatloaf

  • 2 lbs. hamburger
  • 2 eggs, slightly beaten
  • 1½ cups whole milk
  • ¾ cup American cheese, diced
  • ¾ cup Swiss cheese, diced
  • 1 cup dry bread crumbs
  • ¼ onion, chopped
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. paprika
  • 1 tsp. celery seed

Mix all of the ingredients except the cheese and the paprika, and stir well. Reserve about 10 pieces of each type of cheese, and add the remainder of the cheese to the mixture, being careful not to break up the pieces. Press the mixture into a well-greased loaf pan. Slightly indent the center, and decorate with the reserved cheese. Sprinkle with paprika. Preheat the oven to 350 F, and bake for about one hour. When removing from the loaf pan, be sure to loosen all four sides with a spatula before lifting it out so that the loaf will not crumble.

Edna’s Meatloaf

  • 2 lbs. ground beef
  • 4 strips bacon
  • 2 eggs, slightly beaten
  • 2 cups fresh bread crumbs
  • 1 onion, chopped fine
  • ¾ cup milk
  • 2 tbsp. Worcestershire sauce
  • 1½ tsp. dry mustard
  • 1½ tsp. salt
  • ½ tsp. pepper, freshly ground

Preheat the oven to 350 F. Butter a loaf pan. Combine all of the ingredients, except for the bacon, in a large bowl, and mix. Pat into the loaf pan, cover with 4 strips of uncooked bacon, and bake for 45 minutes.

Eleanor’s Meatloaf

Mix all of the ingredients, and stir thoroughly. Press into a greased loaf pan, and bake in a preheated 350 F oven for about one hour.

  • 2 lbs. lean ground beef
  • 2 eggs, beaten
  • 1/3 cup bread crumbs
  • ¾ cup oatmeal
  • 3 tbsp. onion, diced
  • 3 tbsp. fresh parsley
  • 3 tbsp. heavy cream
  • ½ tsp. Worcestershire sauce
  • ½ tsp. beef bouillon
  • 3 tbsp. ketchup
  • 1 tbsp. yellow mustard
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. garlic powder

Mix all of the ingredients, except for the ground beef, thoroughly, and let stand for ten minutes. Blend in the ground beef, and shape into loaf on baking sheet. Bake at 350 F for 1½ hours.

Festive Meatloaf

  • 1 lb. ground beef
  • 1 lb. ground veal
  • 3 eggs, beaten
  • 1 cup cracker crumbs
  • ½ cup onion, chopped fine
  • ½ cup green pepper, chopped fine
  • 1 can tomato soup
  • ¼ cup water
  • ½ cup ketchup
  • 1 tsp. salt
  • ¼ tsp. pepper

Mix the ground meat with the eggs, ketchup, salt, pepper, onion, and green pepper. Add the cracker crumbs, and mix it all very thoroughly. Place in a loaf pan, cover tightly with aluminum foil, and bake at 400 F for 45 minutes. Then remove the foil, pour the tomato soup, mixed with the water, over the loaf. Bake another 15 minutes. Invert the meat loaf on a heated platter, and garnish with parsley sprigs. Serves 8.

Ham-Hamburger Meatloaf

  • 1½ lbs. hamburger
  • 1 lb. ground ham
  • 1 cup bread crumbs
  • 4 slices pineapple
  • 2 eggs, beaten
  • ½ cup condensed milk
  • ¼ tsp. pepper
  • ¼ tsp. dry mustard
  • 1/8 tsp. ground cloves
  • 1 tsp. Accent
  • 1 tbsp. brown sugar

Mix everything except for the pineapple and the brown sugar. Form into a loaf and place in a buttered loaf pan. Place the pineapple slices on the top, holding t hem in place with toothpicks, then sprinkle brown sugar over each slice. Place the loaf in a preheated 350 F oven for about one hour, or until firm to the touch.

Lima Bean & Rice Meatloaf

  • 1 lb. hamburger
  • 2 cans lima beans (#2 cans, drained)
  • 1 cup rice
  • 1 cup stock (or 2 bouillon cubes in 1 cup water)
  • 1 can condensed tomato soup
  • ½ tsp. paprika
  • ½ cup chopped onion
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tbsp. parsley flakes

Sauté the hamburger in a skillet until it loses its reddish color. Add the paprika and the chopped onion, and continue to cook over low heat for five more minutes. Remove from heat. Add the salt, pepper, and parsley flakes. Stir in the rice just as it comes from the package. Then stir in the lima beans. Place the mixture in a well-greased loaf pan and bake at 350 F for 45 minutes, or until the center of the loaf is firm. This makes a good stretcher recipe.

Little Meat Loaves

  • ¾ lb. ground chuck
  • ¾ lb. ground ham
  • 1 cup mashed potatoes
  • 3 eggs, beaten to a golden yellow
  • 1 cup dry bread crumbs
  • ½ cup condensed milk
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 cup water with 2 bouillon cubes dissolved in it

Mix the chuck, ham, and mashed potatoes. Add the eggs and milk. Work in the bread crumbs. Add the salt and pepper. Form into little loaves about 3” long and 2” wide. Place them in rows on a buttered coffee-cake tin. Add the water with the bouillon cubes in it. Cover the tin with aluminum foil. Place in a 375 F oven for one hour. Just before serving, remove the foil and brown the tops of the loaves under the broiler.

Simple Meatloaf

  • 1½ lbs. hamburger

  • 1 medium carrot, grated
  • 1 medium potato, grated
  • ¼ cup onion, chopped
  • 2 cups bread crumbs
  • 2 eggs, beaten
  • ¾ cup condensed milk
  • ¼ tsp. pepper
  • ¼ tsp. salt

Mix all of the ingredients together. Butter a loaf pan, and pack the ingredients into it. Bake in a preheated 350 F oven for 45 minutes, or until the center of the loaf is firm.

Spicy Meatloaf

  • 1½ lbs. lean ground beef (or venison)
  • ½ lb. lean ground pork
  • 1 cup onion, finely chopped
  • ½ cup carrot, grated
  • ½ cup celery, finely chopped
  • ¼ cup green pepper, finely chopped
  • 2 cloves garlic, minced
  • 3 eggs, beaten
  • ½ cup light cream
  • ½ cup ketchup
  • 1 tsp. salt
  • 1 tsp. pepper, freshly ground
  • ½ tsp. cumin
  • ½ tsp. nutmeg
  • ¼ tsp. cayenne pepper

Preheat the oven to 350 F. Combine all of the ingredients lightly but thoroughly, and place in a loaf pan. Bake for 1 hour, or until firm in the center of the loaf.

Steak & Potatoes

  • 2 lbs. ground beef (preferably chuck)
  • 4-5 potatoes, parboiled
  • 1 large onion
  • 1 large green pepper
  • 1 egg
  • ¾ cup soft bread crumbs
  • ½ cup powdered dry milk
  • 1 tsp. prepared mustard
  • 1 tbsp. Worcestershire sauce
  • 2 cups tomato juice
  • 6 tbsp. grated Parmesan cheese
  • 1 tsp. salt
  • ¼ tsp. pepper

Thoroughly mix the hamburger, milk, salt, pepper, egg, and bread crumbs. Form into six large patties about 4” in diameter. Brown the patties in a skillet, and pour away any excess grease. Place patties in a large rectangular baking dish. Cut the potatoes in half and arrange around the patties. On the top of each patty, place several rings of onion and several rings of green pepper. Mix the mustard and Worcestershire sauce with the tomato juice. Pour around the meat patties and the potatoes. Cover with aluminum foil and place in a 350 F oven for 30 minutes. Then remove the foil and place a teaspoonful of cheese on top of each patty. Place under the broiler for 5 minutes longer before serving.

Stuffed Meat Loaf

  • 5 lbs. ground round
  • ½ loaf dry white bread, crumbled
  • 6 eggs
  • ¾ cup onions, diced
  • 5 oz. steak sauce
  • 1¼ oz. Worcestershire sauce
  • 1½ tsp. salt
  • ½ tsp. pepper
  • Stuffing
    • 12 slices bacon, cooked and crumbled
    • 8 oz. mushrooms, sliced
    • 8 oz. Cheddar cheese, shredded

Prepare the meat loaf by combining the first eight ingredients together, and mixing thoroughly. Spread the meat mixture on a table until it is approximately 1-inch thick. Combine all of the stuffing ingredients and mix them well together. Spread the stuffing evenly over the meat mixture, and roll into individual servings or loaf style. Bake at 350 F for one half hour.

3-Meat Meatloaf

  • 1½ lbs. ground veal, pork, and beef.
  • ¼ cup flour
  • 2 cups soft bread crumbs
  • 1 small onion, grated
  • 1 egg
  • 2 cups scalded milk
  • ½ tsp. salt
  • ½ tsp. Accent
  • ¼ tsp. pepper
  • 1/8 tsp. nutmeg
  • 1/8 tsp. cinnamon

A fluted type of mold is best for this meat loaf, although a regular loaf pan will work. Butter all sides of the mold, and sprinkle lightly with paprika. Beat the egg slightly, and add to the meat mixture. Alternately add the flour and the scalded milk to the meat mixture. Add the onion, and work in the bread crumbs. Add the salt, pepper, Accent, nutmeg, and cinnamon. Stir it well to mix the flavors thoroughly. Turn it into greased mold form or loaf pan. Place the mold in a pan of hot water in a preheated 350 F oven, and bake for one hour, or until the center of the loaf is firm to the touch. Turn it out on onto a warm platter. Garnish with parsley and rings of boiled carrots.

  • 1 lb. ground chuck
  • ½ lb. ground veal
  • ½ lb. ground ham
  • 3 slices bread, fresh and soft
  • 3 eggs
  • 1 cup V-8 vegetable juice cocktail
  • 2 tbsp. Worcestershire sauce
  • 4 tbsp. cider vinegar
  • 1 tbsp. water
  • 1 tbsp. minced onion
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 4 tbsp. dark brown sugar
  • ¼ tsp. dry mustard
  • 1 dash of cayenne

Put the V-8 juice into a small saucepan and heat thoroughly. Place the bread, well broken up, into a medium-sized mixing bowl. Pour the heated V-8 over it. Mix until the bread and juice are thoroughly mixed and cooled. Add the eggs, one at a time, mixing thoroughly. Then add the salt, pepper, and cayenne. Now stir the ground meat by hand, until thoroughly mixed. Mix the sugar, vinegar, dry mustard, Worcestershire sauce, and water together, and pour this mixture into the bottom of a loaf pan. Form the meat mixture into a loaf and place in the loaf pan. Bake at 375 F for one hour, then invert the loaf on an ovenproof platter, and bake another half hour. The glaze which was at the bottom of the loaf will now glaze the top. If you wish, spoon the glaze over the top and sides from time to time.

Wheaties Meatloaf

  • 1½ lbs. hamburger
  • 2 cups Wheaties cereal
  • ¼ cup onion, chopped
  • 1 egg, beaten with 1 tbsp. water
  • 1 can beef-vegetable soup
  • ½ tsp. salt
  • ¼ tsp. ground pepper
  • ½ tsp. Accent

Mix all of the ingredients except for the soup, stirring until well blended. Then fold in the soup, making sure not to mash the vegetables beyond recognition. Put into a greased loaf pan and bake in a preheated 350 F oven for about one hour, or until the center of the loaf is firm to the touch. Baste from time to time with the liquid that gathers around the loaf. For variety, you may substitute the beef-vegetable soup with cream of mushroom, chicken, or cream of celery soup. You may also substitute corn flakes, shredded wheat, or Rice Chex for the Wheaties. Try adding 3 tbsp. of wheat germ.
