Beef
You’ll find a lot of beef dishes here, and not all of them will be in the beef section. While beef is a primary ingredient in most of our pasty recipes, and in many of our stew and soup recipes, these will be found in separate areas on this site. Ground beef, or hamburger, can be found as a subsection of this area. As there are so many dishes that can be prepared with hamburger, the hamburger section itself is divided into subsections.
When selecting beef, the color of the lean portions of beef should be bright red. Vacuum-packaged beef and the interior of ground beef have a darker, purplish red color because the meat has not been exposed to air. As the meat is exposed to air, the color will change to the familiar bright red. Generally speaking, beef is best used shortly after it is purchased.
